Thought I would open this topic with a favourite recipe of mine.
SHEPHERD'S PIE.( Bill’s style).
A’ve never been one for cooking a fancy meal,
Just follow my rules and see how you feel,
The ingredients are vital, especially the broon,
When you’ve finished this you’ll be top of the toon.
First find a nice cool glass, fill it to the top with ale,
Take two small sips, then, swallow the rest; don’t fail,
Stage two is similar to stage one, but forget the two sips,
Swallow the ale as fast as it touches your lips.
Stage three, four, five and six follow the same routine,
But swallow the ale more leisurely; you know what I mean.
Before the fifth bottle is empty you should be feeling good,
When you’ve drunk the last bottle you won’t want any food.
Just in case the rest of the family want shepherds pie,
Shout for your wife, she’s better at it, och aye.
6 bottles Newcastle Broon ale
2 pounds lean ground beef
1 cup diced onion
1 cup diced carrots
1 cup diced celery
2 minced garlic clove
Salt, to taste
Pepper, to taste
1/2 teaspoon nutmeg
2 tablespoons melted butter mixed with 2 tablespoons flour (called a roux)
2 pounds potatoes -- cooked and mashed
Butter
Cook ground beef in frying pan until brown. Add onion, carrots, celery, garlic, salt, pepper and nutmeg. Lower heat and cook for 10 minutes or until vegetables are wilted. Stir in enough of the butter/flour roux to make a thick gravy to bind the filling. Pour into large shallow baking dish and cool. The filling should be about 1-1/2 inches deep.
Cover the meat mixture with hot mashed potatoes. smooth potatoes evenly, brush surface with butter. Bake at 325 F for 35-40 minutes.
Ooops, don’t forget to add some broon ale, if there’s any left.
